Are there any products that let me record notes in the car and then download them to a word program on OS10.3 and make edits, etc.?

It won't work wonderfully in a noisy car, but there are digital recorders
that you can dictate into, and then you can download the dictation file
to your Mac and use a voice recognition and transcription program to
convert your dictation into text to use in your word processor.

There are a limited number of microphones that support the fidelity (if
that's the right word) required by transcription software. None of the
microphones available for iPods meet the requirements, for example.
