Maybe I'm missing the point, but it appears Apple does offer a 3 GB
build-to-order option for the iMac; it's $750 additional. See:

3 GB of RAM in a MacBook Core 2 Duo

I've just added a 2GB so-dimm from OWC to my 2GHz Core 2 Duo MacBook,
taking the memory to 3GB. (I installed in the outer so-dimm slot. I
have no idea if this is significant, and I'm not going to swap them
around just to check.)

So far I haven't noticed any slowdown, but since I don't do 3D work
or otherwise strain the video system, perhaps that's to be expected.

I have noticed a good increase in speed when running Parallels and
PPC applications simultaneously, since I no longer get any disk
swapping. A very good $260 worth.
